I would like to sort products on the product landing pages by a subcategory. Is this possible to do somehow?
So for example, if you go here:
http://www.thesunnylion.com/product-category/earbuds/The products are all loaded in under the earbuds category. What I would like to do is to split these into blocks of subcategorys. So you'd land on this page and say a block of six earbuds would be laid out with a unique subcategory header like "new earbuds" and below that another six would have a new subcategory header titled "sale earbuds" and so on...how can I make this happen?

This is more of woocommerce question so you should ask them about it.
However I believe it would also require some templates modifications.
But I don't know woocommerce that well.

Anyway, thing what you want is not easy to achieve as you want to divide them by various things, like new, sales and also by categories. This would require very special loop, and it could take lot of time to make it good. Maybe someone did it already, it just need to be find ;-)
In case of such special display, it would be easier for you to construct spacial page and by using Visual composer shortcodes, divide it as you want. However even with this, you can only divide them purely by category.
For displaying products by ID(this way you can manually choose products to display)

Try it and see where you can get.

Can this show a unique category header and more than 3 products for each category? For example "Best Selling Products" would be called "White Earbuds", so she can add specific product to earbuds as the main category and subcategory "White Earbuds"...
Would this be fairly simple to do?
If you installed latest Fame update http://www.apollo13.eu/themes_update/fame/index.html with update of Visual composer then I believe you can achieve everything with Builder mechanism :-)
