Sorry, I didn't explain it properly. I gave you an example of a missing PNG file on purpose so that you could see the random text that appears. I have a 404 page that is working fine when someone tries to view a page that isn't there. But missing images produce this random text. Where does the text come from? (I definitely didn't write that myself, it looks like placeholder text from the theme possibly?) And more importantly how can I edit it!?

It is your 404 error page. It seems your images are missing from the server, or there is some redirects issues.

Can you find all those images by FTP?
With kind regards.

I believe it is the content of the page, that is set as a custom 404 page in Appearance → Customize → Page Settings → 404 page template.
Please check to what page points setting there. Maybe it points to something trashed, and you will see empty results there. Please try it.
With kind regards.
