Having a bit of an SEO issue
When I do a search for my website, I type maicol headshots in the search to see what comes back and it pulls the information in the attachment. Instead of my MetaTag description that I have second attachment. I added the MetaTag Description to the Album and to the Homepage, but it's still showing the Alt Text or Description of the images. How can I correct this?

As far as I know, reindexing website by google takes some time, days, weeks, it all depends on a website.
I know that you can request Google to reindex your website, however it will still take some time.
Try looking in Google https://www.google.com/search?q=asking+google+to+reindex+website

Though thanks to you I researched the site.xml which wp-rocket was caching and I had to exclude it. I also did as you recommended requested a reindex of the site with Google Search Console (which by the way my site wasn't indexed by Google. When I got there it told me.)
I think it is now displayed good in the Google search result, at least for me :-)
