Can't get "Small" images to show up in posts

I have created a category of "Craftsmen" that introduce shop employees, and I would like to provide a small "thumbnail" image on those posts that would link to individual portfolio pages. Every time I add an image to the post, first off it won't allow me to set a custom size, or for that matter even as a "thumbnail" and it shows up in the list (archive) view for that category: http://whitedesignstudio.com/benchmade/?cat=10

On the single post page it acts the same: http://whitedesignstudio.com/benchmade/?p=89

What I'm looking to do is:

Add small thumbnails that will link to their portfolio items, and not show up on this page: http://whitedesignstudio.com/benchmade/?cat=10

But will show up on this page: http://whitedesignstudio.com/benchmade/?p=89

Is there any way to do this?

Also, the excerpts here: http://whitedesignstudio.com/benchmade/?cat=10 show the entire post and aren't actually excerpts at all. Where can I edit the code to correct this? The way it is now there's no reason to show the "Read More".

And lastly.... typically a "Featured Image" is an image that shows up in the archive view but not the single post view. Why is that not the case here? Can it be made to work the way most themes treat featured images?

Sorry to blast you with so many questions, but the client is reviewing the site now and I'm getting questions from them.
