I would like to have 2 separate pages with a listing of products (using WooCommerce): one for tangible products that we sell and a separate page for events that we sell.
There is no option to create separate two main shop pages in strict WooCommerce way :-)
But you can try one of two tricks: 1. Create two pages, where you will add all your products in post grid elements using Visual Composer. 2. Divide your products to two categories "tangible" and "events", and link these categories as two separate menu positions. You just have to enable Product Category option in menu setting to be able to do it:
