Exclude a work category into the post grid

Hello,
I'have to display a lot of different works with the post grid.
My probleme is that I want to display all the works that have the category X, and in those works, exlude all that have the category Y and Z.
In data settings (post grid) there is a exlude part but you can't but a work category (only article, pages or titles) and if I use filters, you can exlude a catégory on the filter but it still display on the "page".

What can i do to show a work category and exlude from that list a special category ?

So you have works that have more then one category, right?

Visual composer allow this only by custom query (Data source-> Custom query). I have spend over an hour trying to prepare this query for you but couldn't get successful query for excluding term :-(
