Is there a way via css to include the site white border on iPad landscape? I.e the white frame on the 'Paris' demo. Within the theme it's currently disabled for anything other than desktop.
It depends on your knowledge of CSS and this theme. I would say, that even for me, as I created this theme, it will take lot of time to find all places that have to be tweaked to make layout behave good. Also there other aspects that you have to consider when you give out 60px of width to border.
We didn't add border for smaller devices for a reason, really :-)

Nope it is not possible, as you will have to rewrite lot of CSS to accommodate for additional border.
As said here http://apollo13.eu/docs/apollo13_framework_theme/#!/general_layout border is only displayed on screens wider then 1300px.
