Good timing, as we just started today making our website and other services GDPR compliant and we are reading a lot what needs to be done:-)

GDPR is a complicated topic, and it will not be solved by theme/plugin/WordPress alone as it needs attention from you in creating Privacy Policy for example.

As for WordPress and GDPR, 4.9.6 will make WP more compliant with it. Read here for example https://wptavern.com/wordpress-4-9-6-beta-1-adds-tools-for-gdpr-compliance

As for our theme, there is only one theme specific place where some data might be collected and it is Photo Proofing feature. We are now working on better describing what is collected in it, and info about it will be added in next theme update in the readme.txt & documentation and probably in a place where photo proofing is activated.

However, if you do not use this feature you have one thing less to worry about.

As for other plugins that you use you will have to contact their authors to get any information about what data they are collecting if any.
