If you wish to hide one category then go here http://support.apollo13.eu/discussion/144/exclude-a-portfolio-category/p1

If you wish to hide all categories use this custom CSS

#portfolioList{
    display: none;
}

I love this line:-) It means where have you tried?:-)
Easiest will be to use plugin like this http://wordpress.org/extend/plugins/pc-custom-css/ activate it, and next go to Appearance->Custom CSS. There you can insert your custom CSS
