Default Works Category, Remove 'All Categories'

  I'm not sure if I understood You correctly:
  You want to have filter?
  But without 'All Categories' item, right?
  And You want to point one category among others to be selected by default, right?

  it's impossible now. You can always narrow the work's list by use of 'Categories' parameter in 'Works List' shortcode edit panel.
